If you’ve been eating low carb/no carb for awhile now chances are you may be having a craving for that good ole bagel you use to eat often. But we all know bagels are a no, no if you’re eating low carbs.
Back around the holidays I wanted something to replace my bread craving and came across this. It’s a fantastic alternative to a bagel. Does it taste exactly like a bagel? No, not in my opinion. They have more of a cheddar biscuit taste. Pretty good flavor but definitely not the same consistency as a bagel.
My husband, who is a bagel lover, was pleasantly surprised by these. No doubt he gave the “don’t mess with a good thing” look when I told him I was going to try to make my own low carb bagel. With great hesitation he tried them. I received the thumbs up from him.
He recommends eating them cut in half and toasted with cream cheese. On the other hand, I prefer them as is without any additional toppings (they taste like a Red Lobster cheddar biscuit for goodness sake!)

Low Carb, No Sugar “ Bagels”
Ingredients
- 1¾ cups Almond Flour
- 1 Tbsp Baking Powder
- 2.5 cups Shredded Mozzarella
- 2 oz Cream Cheese
- 2 Large Eggs
- Optional: Everything but the Bagel Seasoning (I bought mine at Trader Joe's)
- or seasoning/garnish of choice
Instructions
- Place the mozzarella and cream cheese in a bowl and microwave for 2 minutes, stirring halfway through, until the cheese is completely melted.
- Add the almond flour mixture and eggs to the melted cheese and use your hands to combine all the ingredients until thoroughly mixed. The dough will be very sticky, but it's important to mix it quickly while still hot, and make sure it is very well combined.
- Divide the dough into 6 even parts, rolling each out into a rope, then molding each rope into the shape of a bagel.
- Top with sesame seeds, if desired, and baked at 400 for 10-14 minutes.
- Let them cool for a few minutes on the baking sheet and then remove and enjoy!
