
This weekend we celebrate July 4th. In past years this would often mean large social gatherings and firework celebrations.
Although this year may look a little different for many of us, it doesn’t have to mean we can’t celebrate some of the foods we love.
So if you are planning a holiday cookout and looking for a healthy and tasty side dish to go along with it… look no further.
This Greek Spinach Salad is my go-to salad for summer gatherings! The ingredients are so fresh. And let’s be honest, most of us could use a good salad to go along with the other things we will be eating this weekend 😉
Greek Spinach Salad
This salad is a perfect, healthy, dish to take to a summer small gathering!
Ingredients
Greek Spinach Salad
- 6-8 cups spinach
- 1/2 cucumber sliced and quartered
- 1 tomato diced
- 1/2 cup kalamata olives pitted and halved
- 1/2 red onion thinly sliced
Salad Dressing
- 1/2 cup extra virgin olive oil
- 1/2 tbsp red wine vinegar
- 2 tsp dried oregano
- 1 tsp minced garlic
- 1/4 tsp salt
Instructions
- Whisk together all of the dressing ingredients in a small bowl.
- Mix together all of the salad ingredients in a larger bowl.
- Pour dressing over top of salad ingredients and toss together well.
- Serve and enjoy!
