
Summer is officially over, but that doesn’t mean that we have to stop eating fresh salads. This Fall Salad is a perfect example of why salads are versatile for all seasons!
When I think of Fall I think of apple picking, bundling up around a campfire with a hoodie or blanket on, and gathering with family for an amazing Thanksgiving meal.
This salad gathers all of the flavors of think of with these memories and puts them into one plate.
Our family recently picked honey crisp apples at our local orchard so I had plenty of apples to spare for this salad. Add to it my delicious roasted sweet potatoes, rolled up and sliced deli turkey and some walnuts and this was a salad that I still drool about days after eating it.
Fall Salad – Turkey, Apple and Sweet Potato Salad
This screams Fall in a salad bowl!
Servings: 1
Ingredients
- 3 slices turkey breast deli
- 1/2 sweet potato cooked, peeled and diced
- 1/2 apple cored and diced
- 2 cups romaine lettuce
- 1/2 tbsp raw pecan or walnut pieces optional toasted
Salad Dressing
- 1 tbsp balsamic vinegar
- 1/8 tsp dijon mustard
- 1/4 tsp honey
- 1 tsp olive oil
Instructions
Salad Dressing
- Add all salad dressing ingredients in a small bowl and mix until combined
Salad
- Add romaine lettuce
- Top romaine with all salad ingredients
- Drizzle salad dressing over entire salad and enjoy!
