Who doesn’t love chocolate chips for breakfast? This simple flourless and egg-less banana based recipe not only is easy to make, but is also loved by the kids and grown-ups alike.
My 8 year-old daughter is super into baking these days. This turned out to be such a simple recipe to make and one that she could 100% do on her own (minus me helping with putting the cookie sheet into the oven).
You only need 4 ingredients… yes that’s it! Rolled oats, 3 ripe bananas, peanut butter and chocolate chips (I prefer the mini chocolate chips). That’s it!
Healthy Breakfast Cookies
This super simple recipe is only 4 ingredients and makes a delicious breakfast cookie that you can feel good about giving to your kids!
Ingredients
- 2 cups rolled oats
- 3 large bananas
- 1/2 cup peanut butter
- 1/4 cup mini chocolate chips
Instructions
- Preheat oven to 350 degrees
- In a large mixing bowl, add the oats, bananas and peanut butter and mix well. Make sure to mash the bananas until fully combined with other ingredients.
- Add mini chocolate chips to the mixture and combine well.
- Use a medium size scoop or your hands to form small balls with the cookie mixture and placed on a cookie sheet lined with parchment paper or a non-stick stoneware.
- Lightly press each ball into a cookie shape.
- Bake for 10-12 minutes until slightly golden on the edges.
- Allow to cool for 20-30 minutes before eating or transferring to a container to store.
