Chocolate Chip Blender Muffins

These super chocolatey muffins are a kid favorite!

It’s finally here… my healthy blender Chocolate Chip Muffins!

This recipe is probably one of the most often made recipes in my house. My kiddos go nuts when they find out we are making chocolate chip muffins. They absolutely LOVE them!

So often chocolate chip muffins are filled with a ton of processed sugar and ingredients and the nutritional value is non-existent. I love that I can feel good about giving these muffins to my kids.

I also love involving the kids in making these. The recipe is simple enough that they can get involved and feel like they really helped to make something delicious!

Healthy & Kid Friendly, Blender Chocolate Chip Muffins

Ingredients

  • 2 cups rolled oats quick cooking or old fashion (can substitute with gluten free rolled oats)
  • 2 large very ripe bananas
  • 2 large eggs
  • 1 cup plain greek yogurt
  • 2-3 tbsp honey the more ripe the bananas, the less honey you need
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla extract
  • 1/8 tsp salt
  • 1/2 cup chocolate chips

Instructions

  • Preheat oven to 400 degrees.
  • Place all ingredients (except chocolate chips) in a blender: oats, bananas, eggs, Greek yogurt, honey, baking powder, baking soda, vanilla extract and salt.
  • Blend on high. Stop to scrape down and stir the ingredients once or twice as needed, until the batter is smooth and the oats have completely broken down (approximately 3-4 minutes).
  • Place in the refrigerator for 5-10 minutes to cool batter if batter is warm.
  • While batter is cooling, line a 12-cup standard muffin tin with paper liners. Lightly grease liners with spray.
  • Pour the batter evenly among the 12 muffin cups, filling each no more than 3/4 full.
  • Sprinkle the top of each muffin with 3-4 extra chocolate chips.
  • Bake for 15 minutes, or until the tops of the muffins are set and golden. Insert toothpick in the center to make sure it comes out clean.
  • Let pan cool for 10-20 minutes. The muffins will deflate a little but will still taste delicious.
  • Remove from the pan and enjoy!
