In my mind summer = all things watermelon!
These super simple homemade watermelon popsicles will be begged for by your kiddos (and adults alike)! I love anything simple and this 100% falls into that category.
I swear, it feels like summer hits and my kids turn into eating machines. The amount of times I am asked for a snack in a day is really incredible. I’m not sure if I should be impressed that their bodies can eat that much or concerned that they have small animals eating them from the inside that they must keep fed constantly.
After these first two weeks I’ve finally decided that we are going back to our rule of one morning snack and one afternoon snack. And one of those snacks needs to be a healthy one.
As you can probably imagine, I get quite a few grumbles everyday when they ask if they need to have a healthy snack today and my answer is “yes”. But they don’t give me a fight when healthy popsicles are made!
To them this is 100% a treat!
The awesome thing about homemade popsicles is that you can really make them out of any type of fruit. The watermelon in this one really hits the perfect flavor for summer though!
Watermelon Popsicles
Ingredients
- 3 cups watermelon chopped
- 1 1/2 tsp honey
- 2 tbsp lime juice
Instructions
- Place watermelon, honey, and lime juice in the blender; cover and blend until smooth.
- Strain watermelon mixture evenly into 4 ice pop molds.
- Freeze for at least 4 hours or until set.
- Take out of mold and enjoy!
