This month I did a soup and salads free group for my VIP Fit Fam group on FB. Several soup and salad recipes were shared. This Portuguese Kale Salad really stood out to me!
I basically took two recipes and combined them to make this delicious and very hearty soup.
Let’s talk flavor. One of my biggest pet-peeves with homemade soups is that they tend to lack the flavor in the broth that I prefer. Not this one!
In addition to the great broth flavor, this is a very hearty soup. What do I mean by hearty? I mean it is thick. The kale, carrots, beans and kielbasa sausage make this soup very dense. If you are a cream of something kind of soup person, then this will not be for you. But if you like to chew the items inside your soup, then we have nailed it with this soup!

Portuguese Kale Soup
Ingredients
- 14 oz kielbasa sausage sliced
- 8 baby carrots sliced
- 4 cups kale stems removed and discarded
- 1 15 oz can Great Northern beans
- 1 14.5 oz can diced tomatoes
- 7 cups chicken broth
- 1 tbsp olive oil
- ground pepper to taste
Instructions
- Heat oil in large skillet or saucepan over medium-high heat
- Add kielbasa; cook for 3-4 minutes stirring frequently until browned
- Add garlic, carrots and kale; stir frequently for 3-4 minutes or until soft
- Add Great Northern beans, tomatoes, broth and pepper and stir
- Bring to boil
- Reduce heat to medium
- Cook for 30 minutes, stirring occasionally
- Serve and enjoy!
