Berry Smoothie Breakfast Bowl

So smooth and delicious. This simple and quick breakfast is a taste-bud winner! The added toppings give this smoothy bowl just enough crunch. Totally reminds me of soft-served raspberry ice cream in a bowl!

Ingredients

  • ½ cup raw cashews
  • ¼ cup frozen raspberries
  • ¼ cup nondairy milk of choice
  • ½ teaspoon vanilla extract
  • Pinch stevia
  • 1 tablespoon toasted coconut flakes
  • 1 teaspoon hemp seeds
  • 1 tablespoon blueberries
  • 1 tablespoon slivered almonds

Instructions

  • In a high-powered blender (I used my vitamix), add the cashews, raspberries, milk, vanilla and stevia. Process until well combined; some bits of texture will remain. Scrape sides several times while blending.
  • Top with coconut, hemp, blueberries and almonds.
