Fish Tacos with Fresh Strawberry Mango Salsa and Mango/Lime Creme Sauce
Take your Taco Tuesday to a whole new level with this recipe! Flaky white fish with homemade salsa with fresh fruits and avocado is the perfect alternative to your every day taco.
1lbfish fillets (cod, flounder, tilapia, etc)rinsed and pat dried
1 tspolive oil
1 small onionchopped
4garlic clovesfinely minced
salt and pepper to taste
6tortillas of choice (corn, flour or lettuce wraps)
1 cupbroccoli slawpre-packaged
Instructions
Mango/Lime Creme Sauce
Add greek yogurt, cilantro leaves, lime juice, mango or pineapple jarred salsa, and salt & pepper to a food processer or Vitamix
Blend until completely smooth
Set aside to be added to the fish tacos
Fresh Mango Strawberry Salsa
Add diced mango, diced strawberries, diced avocado, finely chopped cilantro, lime juice and (optional) Jalepeno to a bowl
Mix together and set aside to be add to fish tacos
Fish Tacos
Heat olive oil in a large skillet or non-stick pan over medium heat
Saute diced onion for approximately 4-5 minutes
Add minced garlic to onion and cook an additional 1 minute. Mix well
Place fish on the skillet and sprinkle with salt and pepper
Cook fish until fish begins to flake
Heat tortillas on a skillet for a minute or 2 on each side to warm.
Build your taco! Serve approximately 1/4 cup of fish on each warm tortilla. Top with broccoli slaw, fresh mango strawberry salsa and mango/lime creme sauce.
