Greek Spinach Salad

This salad is a perfect, healthy, dish to take to a summer small gathering!

Ingredients

Greek Spinach Salad

  • 6-8 cups spinach
  • 1/2 cucumber sliced and quartered
  • 1 tomato diced
  • 1/2 cup kalamata olives pitted and halved
  • 1/2 red onion thinly sliced

Salad Dressing

  • 1/2 cup extra virgin olive oil
  • 1/2 tbsp red wine vinegar
  • 2 tsp dried oregano
  • 1 tsp minced garlic
  • 1/4 tsp salt

Instructions

  • Whisk together all of the dressing ingredients in a small bowl.
  • Mix together all of the salad ingredients in a larger bowl.
  • Pour dressing over top of salad ingredients and toss together well.
  • Serve and enjoy!
