In a large mixing bowl, add the oats, bananas and peanut butter and mix well. Make sure to mash the bananas until fully combined with other ingredients.
Add mini chocolate chips to the mixture and combine well.
Use a medium size scoop or your hands to form small balls with the cookie mixture and placed on a cookie sheet lined with parchment paper or a non-stick stoneware.
Lightly press each ball into a cookie shape.
Bake for 10-12 minutes until slightly golden on the edges.
Allow to cool for 20-30 minutes before eating or transferring to a container to store.
